Founder of Keeping It Sharp – Mobile Knife Sharpening in Orange County
I grew up in the suburbs of Chicago, where food was more than a necessity — it was the heart of our home. My grandma was Italian, and Sundays meant one thing: pasta. Big family dinners, meatballs rolling, sauce simmering — that’s where it all started. One of my very first jobs? Rolling meatballs. It doesn’t get more old-school than that.

As I got older, I spent more time exploring the city’s food scene, walking the streets and tasting everything I could. In college in Colorado, I took my first job in a restaurant — and something just clicked. The energy, the craft, the teamwork... it felt right. Not long after, I bought my first “real” knife — a beautiful Shun. I was proud of it. Until I handed it over to a sharpening service the restaurant used.

That knife came back with scratch marks and a ruined edge. I later found out the heat treatment was destroyed — the blade cracked the first time I tried to cut a carrot. That frustration lit a fire. I started learning how to sharpen my own knives. That was over ten years ago.
Since then, I’ve worn a lot of hats in the kitchen — from line cook to executive sous chef, running day-to-day operations and sharpening knives for the whole team. I eventually made a move into butchery and became a charcutier at a whole-animal shop, where I learned how to break down animals and craft house-made sausages and cured meats from scratch.
In 2021, my wife and I moved to Orange County to be closer to her family. I began working for a catering company and quickly noticed the same pattern: the sharpening service they used wasn’t cutting it (literally). I started sharpening my coworkers' knives — they loved it and told me they’d rather pay me. A few sharpenings later at my in-laws' house — mainly to save my own sanity from dull blades — and it hit me:
